CARROT, GREEN APPLE AND GINGER JUICE

A gorgeous, fresh juice that's sweet, tart and spicy

I'm a big fan of carrot juice but I've never attempted to make any at home. Not until I ended up with an extra kilo of carrots in a grocery store mixup. The food processor my mom got me before we moved to Australia (which had barely been used) truly came into its own as it grated, juiced and blitzed us a couple of glasses of juicy goodness.


Ingredients:

Carrots: 2 large, peeled

Green apples: 2 medium, with skin

Ginger: 2 inch piece, cleaned

Water: 1.5 cups

Preparation:
  1. Put the carrots, apples and ginger into a juicer with one cup of water. If you don't have a juicer, no problem. Grate the carrots and apples, chop the ginger into small bits and mix it in a blender with 1.5 cups of water.

  2. Squeeze all the juicy goodness out using a strainer or muslin cloth. Discard the pulp.

  3. The juice shouldn’t require any added sugar but you can add some if you like.

  4. The quantity of ginger can also be adjusted depending on how spicy you like it.

  5. Serve chilled.
